My favoured fish stores in Chinatown are
located on Pender just west of Gore and on Georgia about mid-block between Gore
and Main on the south side. With skate, you can’t expect to find it fresh all
the time – probably Friday afternoon or Saturday morning is best. Only buy
skate when the flesh is translucent (not milky). If in doubt, take a sniff and
don’t buy if there is a uriney odour. Too much info? Good luck. - 太太
