Vegetarian Goose

20 dried beancurd skins
1 1/2 tbsp sugar 
1/2 tsp salt 
1 tsp monosodium glutamate
3 tbsp light soy sauce 
1 tbsp dark soy sauce
275 ml boiling water 
1 1/2 tbsp sesame oil 
5 tbsp vegetable oil

Wipe the beancurd skins with a damp cloth. Mix the remaining ingredients, except the vegetable oil, stirring until the sugar is completely dissolved. Spread one beancurd skin with about 1 tbsp of the sauce, top with another skin and spread this with the sauce. Keep working in this way until half of the beancurd skins are used up. Roll into a loaf and flatten slightly. Wrap in a piece of thin clean cloth and place on a plate in a steamer. Repeat the process with the remaining beancurd skins, wrap and place in the steamer. Pour on any remaining liquid so that the rolls are very well saturated. Steam over a high heat for 10 minutes, then leave to cool slightly. Remove from the steamer and unwrap. Leave to cool completely. Heat the vegetable oil and fry the rolls on all sides. Remove and drain well.
